Pantry Raid Chicken #3: Gochujang Grilled Chicken

As you know I love a good Pantry Raid recipe! This one takes a bit longer than some of my others due to the marinating time but the wait is totally worth it.

This chicken is great on an Asian inspired salad so is perfect for meal prepping! I am getting ready to go back to the office full time after over a year so I’m going to need all the help I can get. Let the meal prep begin!

Gochujang Marinated Chicken
Serves: 4, Prep & Cook Time: 2 hours

1 lb. boneless skinless chicken breast (4 breasts)
2 Tablespoons gochujang
2 Tablespoons soy sauce
1 Tablespoon honey
1 teaspoon rice wine vinegar
1 green onion, sliced
¼ cup cilantro, chopped

Whisk gochujang, soy sauce, honey, vinegar, green onions and cilantro together.

Pound chicken breasts to an even thickness. Place chicken breasts and marinade in a gallon zip top bag and marinate in the fridge for about 2 hours.

Remove chicken from fridge. Preheat grill or grill pan to medium high. Remove chicken from marinade and grill for 3-4 minutes per side or until cooked through.
