Weeknight Warrior: Spicy Shrimp Caesar Salad

I feel like summer is going to keep hanging on for a while but I’m over here thinking about soup, everything pumpkin, boots, sweaters…All in all our summer has been pretty mild so I shouldn’t complain but bring me cooler weather!!

What’s a fall loving girl to do when the temperature keeps climbing and the thought of turning on the stove or oven sends me into a heat induced catatonic state?  I say forget it and whip up a quick, no cook, don’t even think about turning the oven on meal that will keep me and my tiny apartment from spontaneously combusting!

Spicy Shrimp Caesar Salad

1/3 cup mayonnaise
Juice of 1 lemon
¼ teaspoon sambal olek (or sriracha)
1 garlic clove, minced
2 Tablespoons water
Salt & pepper

1 lb. large shrimp, cooked and peeled
1 (10 oz.) package romaine hearts
1 cup grape tomatoes, halved
¼ cup pine nuts
¼ cup parmesan cheese

To serve: shaved parmesan, croutons

In a small bowl, whisk together mayonnaise, lemon juice, sambal, garlic, water, salt & pepper. Set aside.

In a large bowl, toss together romaine, shrimp, tomatoes, pine nuts, and parmesan cheese. Add just enough dressing to lightly coat. Serve topped with shaved parmesan and croutons.
