My mom and I have been making this recipe for as long as I can remember. I think I could make it in my sleep! It was a staple at family gatherings and a lifesaver in the early years of being married, living on a tight budget and wanting to eat healthy.
I always have all the ingredients on hand so it comes together super quick and for super cheap (all I need to get at the grocery is broccoli!). It’s even better when it had a chance to hang out in the fridge overnight which makes it a perfect meal prep recipe for the week!
Broccoli Salad
4 cups broccoli florets
4 slices bacon, cooked and crumbled
½ cup walnuts, chopped
½ cup dried cranberries
½ cup green onions (optional, I add them if I have them)
1 cup mayonnaise
2 Tablespoons milk
1 teaspoon sugar
Salt & pepperIn a large bowl, whisk together mayonnaise, milk, sugar, salt & pepper. Stir in the remaining ingredients. Chill 2-4 hours (it gets even better if it chills overnight). Serve.
