This is the absolute easiest “fancy” appetizer I have in my repertoire and it’s perfect for New Year’s Eve snacking! It comes together super fast and you can prep these ahead of time. In fact, they’re best if you let the cheese hang out in the fridge and marinate for a couple days.
Lemon Herb Bocconcini
Serves: 8-10
¾ cup extra virgin olive oil
1 Tablespoon fresh basil, chopped
1 teaspoon fresh oregano, chopped
1 bay leaf
Peel of 1 lemon, cut into strips without the pith
¼ teaspoon Kosher salt
½ teaspoon red pepper flakes (optional)
16 oz. fresh mozzarella balls (bocconcini)
Heat olive oil over low heat, about 5 minutes. Remove from heat and add basil, oregano, bay leaf, lemon, salt & red pepper flakes if using. Set aside and let cool completely.
Add mozzarella balls to a container and carefully pour over cold oil and herbs. Seal container and place in the fridge for at least an hour. Marinate them overnight for the best flavor.
