You know I am a HUGE advocate for meal planning and prepping so this recipe is perfect to have in your back pocket. Not only is it super easy, I keep the majority of these ingredients on hand so it’s quick and affordable too!
This salad is a great way to use up leftover chicken if you’ve got it (which a lot of times I do! Check this out) but a rotisserie chicken will quickly become your best friend to create quick, delicious meals on the run.
Portion the salad out into individual containers and you’re all set for a week’s worth of lunches with no fuss! Nothing gives me more pleasure than to be able to open my fridge in the morning, grab a pre-made, homemade lunch and zip out the door.
Greek Chicken Salad
1 rotisserie chicken, meat removed from bones and shredded
1 cup English cucumber, diced
½ cup celery, diced
3-4 green onions, sliced
1 cup grape tomatoes, halved
3 oz. feta, cubed
1 cup plain Greek yogurt
½ cup mayonnaise
Juice of half a lemon
Handful of Italian parsley, chopped
Salt & pepperIn a small bowl, mix together yogurt, mayonnaise, and lemon juice. Set aside.
In a large bowl, mix together chicken and next 5 ingredients (through feta). Pour dressing mixture over the chicken. Add parsley. Stir until combined, being careful not to break up the feta. Season with salt and pepper.
Serve in a pita or with crackers for a light lunch!
