Snack Attack: Smoked Cheddar Pimento Cheese

Every family has their version of pimento cheese and we all get a little defensive about it, lol. If it’s not the way grandma or mom made it you can just forget it!  🙂

That being said, I took my mom’s pimento cheese recipe and added my own twist (sorry Mom).  I had some leftover smoked cheddar cheese that I needed to use so I thought “what the heck?” and threw it in with my usual sharp cheddar cheese.  Boy am I glad I did!

I’m devouring this with crackers in my brown bag lunches this week but it would be amazing on a burger!!!

Smoked Cheddar Pimento Cheese

½ pound smoked cheddar cheese, finely shredded
½ pound sharp cheddar cheese, finely shredded
1 (4 oz.) jar diced pimentos, drained
1 Tablespoon yellow mustard
1 Tablespoon granulated sugar
1 cup mayonnaise
Salt & pepper

In a large mixing bowl, stir all ingredients together. Refrigerate until serving. Serve with crackers.
